Vegan Refried Beans Sopes

I love Mexican food but it can be tricky to veganise a lot of the dishes when eating out. Sopes are crispy, thick corn cakes that are usually topped with refried beans, queso cheese, other veggies, salsa, etc. This recipe is extremely satisfying. Simple yet delicious meal packed pull of plant protein, fiber, and phytonutrients.

Ingredients
Sopes (makes 6)
1 Cup masa harina
3/4 Cup warm water
Toppings
1 avocado
1 Cup shredded red cabbage
1 Cup refried beans (canned or homemade)
1/2 sliced cucumber
1 jicama
1/4 a lime
1/4 tsp chipotle chilli spice
Hot sauce (optional)
Servings - 2
Instructions
Combine masa harina and water in a large bowl. Mix well until a dough is formed. Divide the dough into 6 equal pieces. Flatten the dough and create small circle shaped disks. Preheat the oven to 425 degrees F. Bake for about 15-20 minutes.
Once the sopes are done, let the them cool for 1 minute. Add the refried beans, shredded cabbage and avocado. Serve them with lime and jicama 'fries' - rectangularly cut jicama with lime juices and chipotle chili spice. Top it off with hot sauce of your choice!
