Vegan Gyros With Homemade Tzatziki Sauce

Seitan Recipe

  1. 1 Cup vital wheat gluten

  2. 3 tbsp garbanzo flour

  3. 1 Cup water

  4. 2 tbsp nutritional yeast

  5. 1 tsp marjoram

  6. 1 tsp oregano

  7. 1 tsp thyme

  8. 1 tsp sweet basil

  9. 1 tsp garlic powder

  10. 1/4 tsp black pepper

  11. 1/2 tsp salt

  12. 1 tbsp tamari sauce

Combine all the dry ingredients in a bowl. Mix well and add the tamari sauce and water. Form the dough and knead for 3-5 minutes (the longer you knead the more chewy the seitan will become). Add 1.5 Cups of water in your inner pot, place the dough on the steam rack and steam in an instant pot for 30 minutes.

Tzatziki Sauce

  1. 1/4 Cup raw cashews

  2. 1/4 Cup raw sunflower seeds

  3. juice of 1/2 large lemon

  4. 1 tbsp apple cider vinegar

  5. 1/2 Cup small diced cucumber

  6. 1/3 Cup chopped fresh dill

  7. 2 cloves of minced garlic (optional)

  8. 1/4 Cup plant based kefir/milk (or water)

  9. 5 tbsp water

You can either used pre-soaked cashews and sunflower seeds (soaked for at least 8 hours) or boil the cashews and sunflower seeds for 5-7 minutes or until they are soft, strain the water and run under cold water for a few minutes. Combine soaked or boiled cashews and sunflower seeds with lemon juice, apple cider vinegar and blend it with the plant based kefir until really smooth. Add the water and blend more (the consistency should be on the runny side). Add the diced cucumber, dill and minced garlic and mix well with a spoon (not in a blender).

Serve on a pita bread with lettuce, tomatoes, cucumbers and avocados.
