Healthy Breakfast Smoothie Bowl - Vegan



Smoothie bowls make such an easy and nutritious breakfast. I usually have this on Sunday morning before going to yoga because it's much lighter than my regular breakfast -chocolate oatmeal and berry smoothie.

This recipe is rich in fiber, B vitamins, vitamin C, vitamin A, folate, iron, magnesium and potassium. It also looks so pretty.





Ingredients

  1. 1 medium banan

  2. 1 dragon fruit smoothie pack

  3. 1 cup spinach (or any other greens)

  4. 1 cup frozen strawberries

  5. 1/4 cup plant based yogurt

  6. 1 tbsp chia seeds + 6 tbsp water/plant mils


Toppings


For toppings I used 1 kiwi , some frozen blueberries, hemp seeds and pumpkin seeds.

Fresh or frozen berries, nuts and seeds, granola, toasted coconut flakes also make excellent topings.


Instructions

Combine everything except for chia seeds and blend in a high speed blender until smooth. I prefer making a chia gel separately by combining 1 tbsp chia seeds with 6-8 tbsp plant milk or water. Pour the smoothie into a bowl and add the chia gel.Add the rest of the toppings and enjoy!
